All of our honey at Cedarwood is 100% unpastuerized. Raw honey is honey that has not been warmed at all during the extraction, storing and jarring process. Because of this, raw honey is more prone to crystallization but this is easily remedied by gently warming the honey in a bath of hot water or leaving it overnight in the oven with the oven light on. Raw honey contains all the health benefits of pure, unadulterated honey.
