Meats and Cheese head butcher Spencer Vella is featuring select primal cuts from Penokean Hills Farm in Bruce Mines, Ontario. These cattle spend the first 75% of their life grazing green pastures and eating grass. When they are matured, they spend the last 3-4 month being fed a mix of pea and barley grain to help with the marbling and quality of fat. This month’s marketplace features are bone-in striploin and bavette steak. Other limited feature cuts are avaiable for in store shopping such as picanha, flank steak, tenderloin, sirloin, sirloin roasts, ground beef, short ribs, ribeye, skirt steak while supplies last!
